Clotted cream is a thick, luxurious cream made by heating cow’s milk using a steamer or water bath and allowing it to cool slowly. It is associated with South West England, more specifically the farms of Devon and Cornwall, although it’s origins are not fully known. Clotted cream is described as having a sweet and slightly nutty flavour and the texture is similar to butter. It is most commonly known as a filling to scones during an afternoon tea, perhaps with some strawberry jam or lemon curd, but it can also be added to coffee for extra luxury, a side to accompany fresh strawberries, spread on muffins, pie or even just toast. It is also used to make fudge and ice cream.
